Terrariums are such a huge trend right now. But what if we make them edible. Here’s a really fun project for you to do! I had so much fun making this and guess what, I’ve made it healthier. It’s layered with crumbly biscuits, creamy chocolate mousse, chocolate muffin crumbles and decorated with edible flowers and rocks.

This beautiful Edible Chocolate terrarium is great as a gift or even as a Birthday Cake. So are you ready for the recipe?

Let’s start with the 1st layer, which is the “Edible Sand”. For this, you can either use graham crackers, wholewheat or digestive biscuits. Simple place the biscuits into a ziplock bag and crush it using a rolling pin or pastel until you get a sand like texture.

As for the 2nd layer, we’re making the “Moist Soil”. For this, it has to be my 3-ingredient chocolate mousse recipe. What you’ll need are

Ingredients (serves 2)

1) 1 packet (300g) Silken Tofu – 117Cals

2) ¼ cup unsweetened Cocoa Powder – 48Cals

3) 2 - 3 tbsps. Maple Syrup or Honey – 105Cals

All you have to do is blend all the ingredients until smooth. Pour into a bowl and chill in the fridge for 1 – 2 hours or until slightly firm.

Let’s move on to make the “Dirt”, and I’m going to bake some Chia Chocolate Muffins.

The ingredients you need are:

1) ¾ cup Oat Flour

2) ¼ cup unsweetened Cocoa Powder

3) 2 tbsps. Nut Butter

4) 1 part of Chia Mixture: 1 tbsp. Chia Seeds + 3 tbsps. Water

5) ½ cup Milk

6) 2 tbsps. Maple Syrup or Honey

7) 1 tbsp. Coconut Oil

8) ¼ tsp. Baking Soda

Steps

  • Pre-heat oven to 180°C / 350°F
  • In a large bowl, mix in all the dry ingredients, oat flour, cacao powder and baking soda.
  • In another bowl, mix in all the wet ingredients, milk, chia mixture, coconut oil, maple syrup, and nut butter. Stir until well combined.
  • To make the batter, pour the wet mixture into the dry mixture. Stir until you have a thick and consistent batter.
  • Scoop the batter evenly into 6 muffin tins. Bake for about 15 minutes, until the muffins are cooked through.
  • Allow them to cool down to room temperature and just use your hands to break up the chocolate muffins in chunky crumbles.

For the topping, I’ve used crushed pistachios, chocolate covered nuts and raisins, edible chocolate stones and edible flowers.

Once you have all your layers ready, this is the really fun part. Let’s put them all together! You can use a jar, bowl or even wine glasses.

So take about ¼ to 1/3 cup of the crushed biscuits to make the sand layer. Spread it out evenly. Next it’s the moist soil. Scoop the chocolate mousse and gently layer it on top of the sand. Let’s put some “dirt” on now, which will be the chocolate muffin crumble. You want to make this layer slightly higher than the rest.

Now that you have all three layers, let’s decorate it! Sprinkle some crushed pistachio to mimic the “grass”. Then arrange the edible rocks and also chocolate covered nuts and raisins. And for the final touch, place your flowers right in the middle. And there you have it, a healthy edible chocolate terrarium you can make and gift your family and friends. It’s simple, it’s stunning, it’s healthier and hey, YOU made it.

Let’s try it! Every bite is a mixture of crunch, moist and richness of chocolate. It’s a chocolate heaven. So this recipe is all about having fun! Be creative, make this Edible Chocolate Terrarium and tag me @JoannaSohOfficial #JSohRecipe.
